Why you can't just call

Seven of our nine cities don't answer in English.

  1. The booking form is not in English.

    Seven of the nine take reservations in Spanish, Basque, Portuguese, Japanese or Mandarin, by phone or through a form of their own.

  2. Tables go when the city wakes up.

    Ten in the morning in Tokyo is six the previous evening in Los Angeles. Miss the window and the date is gone.

  3. Strangers wait.

    An email from an unknown address abroad goes to the bottom of the pile. A call from someone who has eaten there does not.

    Two to seven. The price follows from the count and the city, and you see it before you pay.

Your card is held, not charged, until the tables are secured. If a room can't be landed and nothing of equal standing can replace it, you pay only for the rooms that were. Tokyo, Osaka and San Sebastian cost more because they cost us more.
